If you’re looking for a classic pancake Tuesday recipe then you’ve come to the wrong place.  This is pancakes for people who cook outside the lines……..  This is an IPAncake with a Hairy Goat IPA sauce.

Hairy Goat IPAncake
Makes 8-10

215g plain flour
2 eggs
1 bottle Hairy Goat IPA (500ml)

  • In a large bowl, whisk eggs and then whisk in 400ml of Hairy Goat
  • In a separate bowl add the egg & beer mixture to the flour.
  • Whisk until the batter is smooth.
  • Rest the batter mix in a cool location for 30 minutes.
  • In a hot non-stick pan, add a little butter and enough pancake mix to cover the base of the pan
  • Cook pancakes for about 60-90 seconds on each side.


Hairy Goat IPA Sauce

100ml Hairy Goat IPA

100g butter

100g brown sugar

2 oranges (peeled & segmented)

Half a lemon juiced


  • Heat the butter, sugar and Hairy Goat IPA in a small pot or pan.
  • Bring to a boil and reduce the sauce by a third or until the mixture is thick and glossy.
  • Now add the lemon juice & orange segments to the sauce and cook for a further 60 seconds.
  • Pour sauce over pancakes and top with cream
